Hello Everyone! It’s Aniko from  Place of my Taste and I am so glad to be here today.

Happy Spring! I am really enjoying the beautiful weather here in VA. Yesterday it really felt like summer here and I could not think of anything else but a fresh crunchy salad with spicy chicken stripes. Spring always means lots of fresh flowers, fresh veggies and fruits to me. Today I will share one our favorite salad recipe, buffalo chicken salad with blue cheese crumbs.

I know…

You either love or hate spicy and blue cheese.

We love both…I am a huge blue cheese lover. I just love the strong taste of it. If you don’t like blue cheese substitute it with feta cheese on your salad.

BUffalo chicken Salad by Place Of My Taste (3 of 5)

Buffalo Chicken Salad

Ingredients

  • 2 boneless chicken breast halves
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 3-4 tablespoon hot sauce
  • 1/3 cup bottled blue cheese salad dressing
  • 2 cups romaine salad
  • 3 medium tomato, sliced
  • 1/2 cup thinly sliced celery
  • 1/2 cup crumbled blue cheese, 2 ounces

Instructions

  1. Season the chicken breast with salt and pepper.
  2. Heat olive oil and grill chicken for 10 to 12 minutes or until chicken is no longer pink, turning and brushing with hot sauce.
  3. Slice chicken.
  4. In a medium serving bowl stir together romaine salad, celery, tomatoes and add blue cheese crumbles.Add blue cheese salad dressing. Toss to coat. Arrange sliced chicken on top of salad mixture. Sprinkle with the remaining blue cheese.

I think I really should call myself lucky because my work is literally 5 minutes drive from my house. Uh…so convenient. I usually run home to quickly put something together for lunch. This salad makes the perfect 15 minutes lunch with some french baguette on a busy weekday.
