This Healthy, Fresh Lentil Salad is one of my absolute favorite salads to make and I make it at least every few weeks. It’s super nutritious, easy to make and very tasty!

Ingredients:
– 1 uncooked lentils
– 1 whole english cucumber
– 1 whole red bell pepper
– 1 bunch of cilantro
– Juice of one lemon
– Extra Virgin Olive Oil
– Salt to taste
