No this is not another boring low carb salad, keto salad, lchf salad or banting salad. This is an absolute winner of a salad and will make everyone come back for seconds, I can promise you that!
Everyone loves a great low carb dinner or low carb supper but sometimes it can take too long or just gets a bit boring! Well I have one of the most versatile low carb meals you can find. It is the low carb roasted vegetable salad with creamy avocado dressing. It is packed full of micronutrients, is so simple to make and tastes heavenly!
This ketogenic meal is so quick to make and takes very little effort or skill. You can spice this keto recipe up by adding in a protein should you choose, you could add some of my low carb cauliflower fried rice to it (as I do in the video), you can change or add any type of vegetable you fancy and you can eat this low carb meal for almost any meal of the day. Whether it is a low carb dinner you are looking for, a low carb lunch that fits in with your keto lifestyle or low carb lifestyle, or a quick on the go snack, this low carb veggie salad will do the trick for you! Seriously, this needs to be a staple in your low carb, keto, lchf, banting household!
I would recommend making extra of the roasted vegetables so you have left over for future meals. You then have a fantastic low carb dinner, low carb lunch or low carb snack which is in the fridge and can be simply heated up, added to some leafy greens and eaten the next day with absolutely no effort! That is smart in my books and I am sure each of my subscribers can appreciate that with their low carb lifestyle or keto lifestyle (and their busy lives).
The Avocado dressing is as simple as can be. And you won’t believe how good a low carb dressing or keto dressing like this can taste! A million times tastier than those terribly processed salad dressings from the stores which contain very few healthy ingredients and a lot of downright awful ingredients! The Avocado dressing is so creamy, so rich that is just makes this roasted vegetable salad. The best part is, you can choose as little or as much of the avocado dressing you want on this low carb salad, banting salad / keto salad.

80g net carbs (121g carbs – 41g fibre)
Macros per dish (assuming 6 portions):
13g net carbs (20g carbs– 7g fibre)
1lb diced butternut (450grams / 16oz)
1lb Brussel sprouts halved (450grams / 16oz)
1 Bell Pepper (red preferably)
3 Tablespoons Olive Oil (45ml)
Salt & Pepper to Taste
2 teaspoons Dried Oregano
Leafy greens (lettuce / salad / any greens mix)
¼ cup Olive Oil (60ml)
