Quinoa Avocado Salad
Just simple ingredients. Dressing is lemon and olive oil. Toss it all together. This is a high energy salad that comes together in a flash and makes for awesome lunch leftovers the next day!

Ingredients
2
cups
english cucumber
chopped, seedless is best
2
cups
tomatoes
chopped
2
avocados
large, diced
1
cup
red onion
sliced
2
cups
Quinoa
cooked
1/4
cup
chopped cilantro or herbs of choice
Juice of 1 lemon
A drizzle of olive oil I used about a tablespoon
Salt + pepper to taste
Instructions
In a large bowl combine the cucumber, tomato, avocados, onion, quinoa and cilantro. Toss to combine.
Squeeze lemon juice over salad, drizzle with olive and season with salt and pepper, and give it another toss.
Place in the fridge for at least 30 minutes to let the flavors marinate. Taste and adjust seasonings as needed.
