1lb tri-color rotini pasta, cooked al dente, and cooled
10 oz grape tomatoes, halved
1/2 cup black olives, sliced
8oz mozzarella, cubed
1/2 cup grated parmesan cheese
1 cup mini pepperoni or 1 cup of regular pepperoni, quartered
1 bottle Italian Dressing (I used the Aldi version of Olive Garden dressing)
salt & pepper
Combine all ingredients in a large bowl. Start with half of the bottle of dressing and save the other half for later. I usually make this the day before and add more dressing just before serving.

STRAWBERRY FETA SALAD (mamalikestocook.com/strawberry-feta-spinach-salad/)

2 pounds of red potatoes, unpeeled
1lb uncooked bacon, chopped
2 green onions, chopped, whites and greens separate
3-4 cloves minced garlic
1/2 cup lemon juice
1/2 cup water
1 1/2 Tablespoons Dijon mustard
1/4 cup maple syrup
salt & pepper

Bring the potatoes to a boil in a large pot of salted water. Boil until they are fork-tender, about 15 minutes. Drain the potatoes and let them cool. Cook the bacon in a pan over medium heat. Cook the bacon until it is crispy. Transfer the bacon to a plate, leaving about 3 tablespoons of the grease in the pan.
Add the whites of the green onions to the pan and cook, stirring, cook for about 1 minute. Then add in the minced garlic and cook for 30 seconds. Stir in the lemon juice and scrape any of the bits of bacon off the bottom of the pan. Stir in mustard, maple syrup, water, and salt & pepper. Simmer the mixture for 3 to 5 minutes until it has reduced to about 1 cup. Cut the potatoes into quarters then add them to a large bowl. Pour the dressing over the potatoes, add the cooked bacon and toss to combine. Top with the green onion and serve warm.
