Asian Chopped Salad

Asian chopped salad is a decadent salad with crunchy vegetables, flavorful nuts, thick, rich lettuce, coleslaw mixture and tender grilled chicken breast.

This was such a yummy salad, and you could totally (easily) make it vegetarian, just leave it off your salad.

Here are a few of my favorite salads that are easy to make and delicious: Greek Chicken Wedge Salad, Chicken avocado Caesar salad, Honey dijon chicken Cobb Salad or Greek Chicken chopped salad.

What you need to make Asian Chopped Salad

One of the things I loved about this salad is the crunch of the fresh vegetables, the nuts, the sweet peppers, the salty dressing.

It was a party on my palette. I ate it for lunch and dinner!

Dressing:

  • minced garlic cloves
  • piece fresh ginger or 1 tsp
  • soy sauce
  • red wine vinegar
  • Raw honey
  • Sesame oil
  • Water

Salad:

  • Coleslaw mix
  • Green leaf lettuce
  • Sugar snap pea
  • Cucumber- diced
  • Almonds- slivered
  • Cilantro- chopped
  • Green onion 
  • Cashews- chopped
  • Mini peppers
  • Grilled chicken breast

  • Mix dressing ingredients together.
  • Mix salad stuff together.
  • Top with desired amount of dressing.

This salad is perfect for meal prepping. It makes it nice and easy to use all the ingredients at once by making several make-ahead meals for your week.

Super simple to make and lasts for about 3 days in an airtight container.

Ingredients

Dressing

  • 2 tsp minced garlic cloves
  • 1 inch piece fresh ginger or 1 tsp
  • 1/2 cup soy sauce low sodium so it won’t be too salty
  • 1/4 cup red wine vinegar
  • 2 tbsp raw honey
  • 3 drops sesame oil
  • 1 tbs water

Salad

  • 3 cups coleslaw mix
  • 3 cups chopped green leaf lettuce
  • 1 cup chopped sugar snap peas
  • 1/2 cucumber diced
  • 1/4 cup slivered almonds
  • 1/4 cup cilantro chopped
  • 1/4 cup green onion chopped
  • 1/4 cup chopped cashews
  • 3-5 sweet mini peppers chopped
  • Grilled chicken breast chopped (optional)

Instructions

  • Mix dressing ingredients together.

  • Mix salad stuff together.

  • Top with desired amount of dressing.
