SALAD — 1/2 bag edamame, shredded red cabbage, shredded Napa cabbage, 1 cucumber (diced), 2 carrots (shredded), 2 scallions (sliced thinly)
DRESSING — 6 tablespoons vegetable oil, 2 tablespoons toasted sesame oil, 1 1/2 tablespoons of grated ginger, 3 teaspoons of Ponzu with lime, juice of 1/2 lime, 1 leaf of Kaffir lime (sliced thinly)
**This will last in the fridge 2-3 days! Cabbage leaves don’t break down as fast as lettuce. Tastes great with grilled shrimp.
