Edamame Salad (Vegan)

I know that everyone is trying to be healthy these days so this recipe definitely fits the bill as far as nutrition and health! Oh and it tastes absolutely amazing and is super easy to make. Enjoy Guys!

Healthy Edamame Salad


16 Oz. Edamame
Chopped Basil
Chopped scallions
Diced Red and Yellow tomato
1 Red onion
2 Oz. Mirin
1 Oz. Low sodium soy
1 Oz. Chopped garlic
1 Oz. Rice wine vinegar
6 Oz. Corn
Sliced Roasted peppers
Diced Cucumber


1. Bring salted water to a rolling boil in a medium sauce pot. Add the edamame, bring to a boil again and cook for 3 minutes.
2. Drain the beans and run cold water over them to stop the cooking process.
3. Combine the beans with all of the other ingredients. Mix thoroughly.
4. Chill for no less than 1 hour before serving.

For those that want to cook the beans fresh in their pods:

To boil: Bring a large pot of water to a boil and salt it generously. Add the edamame, return to a boil and cook until bright green, 3 to 5 minutes. Drain.
Sprinkle with a teaspoon of salt and a little or a lot of black pepper. Toss and serve hot, warm or chilled with an empty bowl on the side for the pods.
