
This salad is a great way to enjoy everything you love about falafels without actually having to make them. It’s quick, easy and delicious.
Ingredients:
1 cup (190g) quinoa
Handful of flat-leaf parsley, roughly chopped
Handful of coriander, roughly chopped
1x400g tin chickpeas, drained and rinsed
125g cherry or grape tomatoes, quartered
50g Danish feta, crumbled
Tahini dressing
¼ cup (65g) tahini
1 garlic clove
3 tablespoons lemon juice
½ teaspoon ground cumin
1 fresh chili, or chili flakes
Pinch of sea salt
