We always have Curly’s pulled pork in our fridge or freezer…just waiting for a busy night to make a delicious meal. You can find it right in the refrigerated section at your grocery store.  I love how versatile Curly’s can be! You can make Cubano sliders, hash with a fried egg on top or (our favorite!) sliders with Asian slaw. This taco salad is up on our list of favorites now!

Quick and easy meal for lunch or dinner: Pulled Pork Taco Salad! via @DashOfEvansYou can buy the taco shell at the store or make your own– I love the ones found in the refrigerator section (right by the cinnamon rolls and dough). Once you have the shell, everything can be made in less than 5 minutes while the pork is heating up.

For the salad part of the meal, I take a little help from the store with coleslaw mix. Curly kale adds extra crunch and a boost of vitamins! Feel free to use whatever salad fixings you have on hand! Adding black beans would be delicious for this taco salad, too!

Pulled Pork Taco Salad with Avocado Ranch Slaw

Easy meal in 15 minutes? Yes please! Curly’s pulled pork is combined with an avocado ranch slaw for a new twist on taco salad.

Ingredients

  • 1
    package
    Curly’s Pulled Pork
  • 2
    premade taco salad shells
  • 2
    cups
    coleslaw mix
  • 1
    cup
    curly kale, chopped
  • 1/4
    cup
    Avocado Ranch dressing
  • 1
    whole
    avocado, mashed
  • 1/2
    lime, juiced
  • 1
    roma tomato, seeded and chopped
  • 4
    green onions, sliced
  • Sour Cream, optional
  • 1/4
    cup
    cheddar cheese

Instructions

  1. In a medium bowl, toss the coleslaw mix, kale and avocado with the avocado ranch dressing. Squeeze lime juice over the top. Set aside.

  2. Heat Curly’s Pulled Pork as directed on package.

  3. To assemble, put slaw mix in the bottom of the taco salad shell. Top with pulled pork, green onions, cheese and tomato. Add sour cream, if desired.
