Avacado Pasta Salad

Another great summertime salad for the campout, BBQ or dinner party. This heart healthy salad recipe makes use of avocado as a main protein and has the filling goodness of pasta. Sweet peas, corn, spinach and baby tomatoes round out the textures and tastes of this vegan friendly salad.

Also known as the alligator pear or the butter fruit, Avocado is known to contain over 20 vitamins and nutrients. This naturally dense fruit also provides a healthy amount of monounsaturated fatty acids. Avocados contain 25 milligrams per ounce of a natural plant sterol called beta-sitosterol. Regular consumption of beta-sitosterol and other plant sterols has been seen to help maintain healthy cholesterol levels.

  1. In a food processor, combine the spinach, avocados, garlic, lemon juice, salt, pepper and blend until smooth.
  2. Pour over the cooked pasta and toss until pasta is evenly coated.
  3. Slice the remaining avocado and add into the pasta, along with the corn, sweet peas and halved baby tomatoes
