Rojak is a Malaysian Spicy Fruit Salad with an eclectic mix of flavors and textures unlike any other. It is spicy, sweet, salty, tangy, soft, and crunchy salad extremely popular in Singapore and other South East Asian countries.
Rojak. has diverse elements and polar opposites that is blended together, which makes this dish unique.Its composition can vary greatly from one region to another.
While this ancestral dish can come in countless variations and seasoned with petis udang (a thick black shrimp sauce), asam jawa (tamarind), and sambal belacan (a chili mixture with shrimp paste), we have prepared a simplified Vegetarian and Vegan version with fruits, vegetables and fried Tofu dressed with Sweet & Tangy Tamarind sauce, Red chilli paste & garnished with cashew nuts.
It is must try for all those who like a healthy, crunchy snack or a salad.
Tamarind 1 cup
Jaggery 1 & half cups
Water 2 cups
Salt to taste
( Pressure Cook for 1 whistle/ Boil on stove for 20 minutes)
Cool & Mash the paste. Pass it through a sieve. Add 2 tsps of Red Chilli Powder, 2 tsps of Cumin powder and mix well.
