6 Ingredients

  • 100g mixed salad leaves

  • 1/2 cup fresh flat-leaf parsley leaves

  • 1 continental cucumber, halved lengthways, thickly sliced

  • 340g jar mixed marinated olives

  • 2 x 125g portions hot-smoked salmon

  • 2 tbsp hot tomato chutney

  • Select all ingredients

3 Method Steps

  • Arrange salad leaves (100g mixed salad leaves), parsley (1/2 cup fresh flat-leaf parsley leaves) and cucumber (1 continental cucumber, halved lengthways, thickly sliced) on a platter. Drain olives, reserving 1 tablespoon marinating oil. Top salad with olives (340g jar mixed marinated olives).

  • Remove and discard skin from salmon portions (2 x 125g portions hot-smoked salmon). Flake salmon and place on salad.

  • Combine tomato chutney (2 tbsp hot tomato chutney), reserved marinating mixture and 2 tablespoons cold water in a small bowl. Season with salt and pepper. Drizzle over salad. Serve.
