These crunchy fritters are low in fat, quick to prepare and chock full of veg. Perfect!

200g shaved leg ham, chopped
5 green onions, thinly sliced
1/2 cup chopped fresh flat-leaf parsley leaves
1 tbsp dijon mustard
1/3 cup plain flour
1 large egg, lightly beaten
1 tbsp olive oil
Salad (see note), to serve
Tomato chutney, to serve

4 Method Steps
Preheat oven to 170C/150C fan-forced. Place a wire rack over a baking tray lined with baking paper.
Place potato (500g orange sweet potato, peeled, grated), ham (200g shaved leg ham, chopped), onion (5 green onions, thinly sliced), parsley (1/2 cup chopped fresh flat-leaf parsley leaves), mustard (1 tbsp dijon mustard) and flour (1/3 cup plain flour) in a large bowl. Stir to combine. Season with pepper. Stir in egg (1 large egg, lightly beaten).
Heat half the oil (1 tbsp olive oil) in a large non-stick frying pan over medium-high heat. Place 1/4 cup mixture into pan, flatten slightly. Repeat to make 4 fritters. Cook for 3 to 4 minutes each side or until cooked through. Transfer fritters to prepared tray. Place in oven to keep warm. Repeat to make a total of 12 fritters.
Serve fritters with salad (Salad (see note), to serve) and chutney (Tomato chutney, to serve).

Recipe Notes
To make salad: combine leaves of 1 green oak lettuce with 1 peeled and sliced Lebanese cucumber, 1/2 sliced red onion and 125g halved cherry tomatoes. Add French salad dressing. Toss to combine.
