This crunchy and spicy salad is high in protein and low in carbs. Replacing lettuce with mild green cabbage helps you include a cancer-fighting cruciferous vegetable into your diet.
- 2 c. shredded cabbage
- 4 oz. cooked, ground lean turkey
- 1t. chili powder
- 1 t. cumin seed
- 1/4 c. shredded low fat cheddar
- 6 black olives, sliced
- 6 T. chopped, fresh cilantro
- 2 T. Salsa
- 1 lime wedge
- Cook turkey in nonstick pan with chili powder and cumin. Toss together the rest of the ingredients. Squeeze lime wedge over all. Top the vegetables with the hot turkey.
