Serves 4 | For the dressing – 4 tbsp olive oil – 2 tbsp fish sauce – The juice of 2 limes – 2 tbsp caster sugar – Salt | For the salad – A red onion, finely chopped – 2 oranges, peeled and segmented – 1 cucumber, deseeded and thinly sliced – 200g cherry tomatoes, halved – 2 large handfuls of coriander leaves – 2 large handfuls of mint leaves – 40g toasted peanuts, smashed – 1 red chilli, finely chopped – 300g cooked chicken, shredded
1. To make the dressing, whisk together the olive oil, fish sauce, lime juice and caster sugar and a pinch of salt.
2. Put the red onion, orange and any juices, cucumber, tomatoes, lettuce, herbs, chilli, peanuts and chicken into a bowl. Pour over the dressing. Toss together and serve immediately.
