There’s a lot of vegan quinoa recipes out there but THIS is the easiest quinoa salad recipe you’re going to find! This is also one of those weight loss friendly vegan recipes. Seriously, this will really become one your your favourite easy vegan salad ideas.
So here’s how to make black bean quina salad!
First, here’s the dressing for quinoa salad:
⦁ 1/4 cup olive oil
⦁ 1 tsp cumin
⦁ 1/2 tsp each garlic and onion powder
⦁ 1 clove (or more) minced garlic
⦁ 2 tbsp lime juice + zest if you have it
⦁ Salt & pepper
⦁ Cayene pepper or hot sauce to taste
How to make quinoa salad vegan:
– Cook 1 cup (uncooked) quinoa with veggie broth according to package
– Add 1 can of black beans and 1/2 – 1 full can of corn
– Add in one chopped bell pepper (whatever colour you want but red is nice) and 5-6 chopped green onions
*** Can add other veggies, like tomato and cucumber, but best to do that when you serve it.
