¼ cup peanut butter
2-3 dates, soaked
1 tbsp lemon juice
½ inch ginger piece
2 garlic cloves
A pinch of red chilli powder
Rock salt to taste
A pinch of black pepper powder
8-10 ice berg lettuce leaves, hand torn
6-8 broccoli florets, blanched
8-10 red radish slices
4 red cherry tomatoes, halved
4-5 cucumber slices, halved
4-5 carrot slices, halved
Roasted pumpkin seeds for garnish


1. For making the dressing, take peanut butter in a blender jar. Add dates, lemon juice, ginger, garlic, red chilli powder, rock salt, black pepper powder and blend well. Add ¼ cup water and blend till smooth.
2. Take lettuce leaves in a large bowl. Add broccoli, radish slices, cherry tomatoes, cucumber, carrot, and 2 tbsps prepared dressing and gently mix.
3. Garnish with pumpkin seeds. Serve immediately.
