

Yep you read that correctly, a bacon, lettuce & egg salad sandwich. Don’t knock it until you try it and I am guessing you will be hook line and sinker like my family was when we gave the traditional BLT sandwich recipe a simple but oh so good twist. Meet your new favorite sandwich mash-up! Just in time for lots of decorated hard-boiled Easter eggs to use up. Let’s get cooking, shall we?

Quick & Easy Bacon, Lettuce & Egg Salad Sandwiches
Should we call them BLES (or blessed) sandwiches…you will feel blessed by them. I know it. Let’s start with the ingredients and then we will assemble them. I made enough for 4 full sandwiches since some of my kids only eat half a sandwich but this recipe is easy to double for larger families.

Bacon, Lettuce & Egg Salad Sandwich Ingredients
**This recipe makes 4 sandwiches.
- 8 Slices Bread, Toasted
- 12 Slices Bacon
- 4 Leaves of Lettuce
- 6 Hard-Boiled Eggs
- 1/3 C. Mayonnaise
- 1 Tsp. Yellow Mustard
- 1/2 Tsp. White Vinegar
- 1/4 Tsp. Paprika
- Salt & Pepper To Taste
How to Make Bacon, Lettuce & Egg Salad Sandwiches
Start by hard boiling your eggs (check out how I hard boil eggs in my instant pot here, so easy). I used an egg slicer (like this) to finely chop the eggs and place in a mixing bowl. Add in the mayonnaise, mustard, vinegar, and paprika. Mix together. Add in salt and pepper to your please your taste buds.
Cook up the bacon (check out how I cook it in the oven). To be honest, for this recipe I cheat and just buy the pre-cooked bacon to simplify things. So, I warm that up in the microwave while I toast up the bread.
Then, it’s time to assemble the sandwiches. I like to slather on the egg salad on both slices of bread, then sandwich in a leaf of lettuce and 3 slices of bacon cut in half. My mouth is watering already, this sandwich is so good. The egg salad acts like the mayo in a traditional BLT sandwich.
Serve up this quick and easy bacon, lettuce and egg salad sandwich with some chips, raw vegetables and fruit for an easy but delicious meal. You will use up all those colored eggs in no time with this delicious sandwich!
