
Ingredients:
- * 3 c cooked and diced leftover chicken (thi i also approximately
- how much 1 deli rotisserie chicken yield)
- * 1 c red seedless grape, halved
- * 2 rib of celery, chopped
- * 1 tbsp onion powder
- * 1 tsp seasoned salt (we use lawry's)
- * 1/2 c mayonnaise (give or take depending how creamy you like
Instructions:
- Cook your chicken using whatever method you prefer – or, do what I do and grab a rotisserie chicken from the deli and use all that meat. Dice it up.
- Wash your grapes and celery, halve the grapes and dice the celery. Stir them into your diced chicken and set this all aside.
- Mix the onion powder and seasoned salt into the mayo really well, then stir in your chicken mixture.
- Chill until ready to serve, then add to croissant rolls. For parties and pot lucks, I like to serve on mini croissants. For each batch, you'll need 12 mini croissants or 6 regular sized croissants.
