Hot Tofu Nugget Salad
INGREDIENTS

—Tofu Nuggets____
2x 450g packs firm tofu
1 cup corn crumbs
1 cup plant based milk
1 cup gluten-free flour
1/2 cup gluten-free corn starch
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
Oil spray

—Sauce_____
1x 148ml bottle Frank’s Red Hot Original Cayenne Pepper Sauce
Vegan Butter – 2 tablespoons

—Salad_____
2 cups Cos or iceberg lettuce
2 cups baby spinach
2-3 spring onions
200g cherry or grape tomatoes
1 cup chopped celery
1/4 cup olive oil
2 teaspoons salt

I have to admit – cooked like this tofu is actually pretty awesome 😜 only my second time cooking tofu (first time was years ago and it’s wasn’t great – hence why I probably haven’t tried since!) but I will definitely be making this again! 👌
