Easy Spicy Carrot Salad

Spicy Carrot Salad is a vegan/veggie friendly dish. This is a fast and easy to prepare salad that just happens to look very fancy. You don’t have to tell your guest it was done in the microwave.


  • 1/2 lb. organic carrots – washed, peeled (optional), and grated
  • 1 teaspoon minced garlic (or garlic to taste)


  • Olive Oil
  • Lemon Juice
  • Red Pepper Flakes
  • Parsley

Microwave grated carrots and minced garlic in 1/4 cup water until crisp-tender. Drain; toss with lemon juice, olive oil, salt, red pepper flakes and parsley.

You can steam the carrots and garlic in a double boiler. A strainer inside of a pot works too. Just use a small amount of water.

Tip: Grating raw carrots is easy for some but you can save your strength by steaming the carrots for a few minutes to soften them first.

You can add chick peas for protein.  For a less spicy taste use less garlic and swap the pepper flakes for some sesame. Try adding few raisins or nuts.
