Muffaletta salad is a low-carb and keto-friendly appetizer that can be served in shot glasses for an elegant appetizer for a Mardi Gras party or any other gathering!

When Mom and I visited New Orleans last fall, we got to tour around our beloved Big Easy and explore the fascinating culinary side of the French Quarter. We chronicled our food tour when we got back, but I just could not stop thinking about that glorious Muffaletta we sampled at Napoleon House.

Originating in New Orleans (at Centrol Grocery Company, to be exact), Muffalettas are named for the round bread they use. They’re piled high with capicola ham, mortadella, genoa salami, provolone cheese, and olive salad. The flavors are out of this world!

Muffaletta Salad

I have been eating low-carb for a while now and finding a good low-carb or keto-friendly appetizer is so hard! It seems like everything needs chips, crackers, or bread and you can only dip veggies in so many things before you’re totally over it.

And then, there are the sandwiches! Not eating bread is hard, but when it comes to muffaletta, the ingredients are so delectable that they can be enjoyed even without the bread.

Muffaletta Salad

When you buy a good olive salad, it isn’t hard to see how these muffaletta salad appetizers come together so quickly. Just dice up all the meat and cheese and layer the ingredients in small glasses (I used 2 ounce shot glasses!) for an elegant appetizer. Pop in a skinny grissini (thin, crispy bread sticks) for your carb-loving friends and serve with little appetizer spoons! How easy is that?

These low-carb appetizers would be so perfect for a Mardi Gras party, but I also ate some for lunch today and it makes a pretty solid meal when served in larger portions!

Ingredients  

  • ¼ lb genoa salami
  • ¼ lb mortadella
  • ¼ lb capicola ham
  • 6 oz provolone
  • ½ cup olive salad
  • grissini bread sticks

Instructions 

  • Dice all meat, combine, and set aside. Dice cheese and set aside.

  • Spoon a heaping tablespoon of meat mixture into each shot glass. Top with a table spoon of diced cheese and a teaspoon of olive salad mixture.

  • Break grissini breadstick in half and stick both halves into the glass. Serve with small spoon or forks.
