
A couple of my favorite vegetables are Tomatoes, Cucumbers and onions so why not put them together in a simple little Cucumber Tomato Salad? Honestly, I’ve always thought that I needed to add more to the salad like pasta cheese, pepperoni but this simple salad is one of my new favorite snacks and side salads.
I’m hoping by eating more fresh veggie salads like this at lunch will help me shed some of the winter layer that I developed after the long yucky snow here in Minnesota over the last several months.
How I made this Simple Cucumber Tomato Salad
Ingredients You Need
- 1 Large Cucumber, diced into pieces
- 4 Roma Tomatoes
- 1 Red Onion, diced
- 2 Tablespoons Pompeian Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1 Teaspoon Kosher Salt
- 1/2 Teaspoon Pepper
Instructions
Step 1 – Cut up the tomatoes, cucumber and onions into similar sized pieces
Step 2 – Place all the veggies in a medium sized bowl and drizzle with the Pompeian Olive Oil, Red Wine Vinegar, Salt and Pepper
Step 3 – Mix together well and eat right away or refrigerate until you are ready to enjoy this simple salad.
You can easily throw in a cup of pasta, cheese or pepperoni to add a little more to the salad as well as more of your favorite veggies. These are my favorites though, I can and sometimes do eat them every single day. I have to admit that I like to add some Mozzarella cheese to my salad from time to time too. It’s really delicious!
I can’t wait to make this Cucumber Tomato Salad more often during the summer with some fresh veggies from the garden, that will just make this easy salad that much better!
