Black Bean & Corn Salad

A yummy low fat, high protein side dish

Ingredients:

  • 2 small tomatoes, diced
  • 2 green onions, chopped
  • 1 green pepper, chopped
  • 1 can black beans
  • 1 can sweet corn
  • 1 can garbanzo beans
  • 1/4 cup balsamic vinegar
  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 tsp cilantro
  • 1 tsp cumin
  • 1 tsp sea salt
  • sliced avocado (optional, not included in calories)

Instructions:

  1. combine all ingredients except avocado and refrigerate for 3 hours. Serve with sliced avocados on the side.
