It’s day 3 of my “Vegan Salads That Don’t Suck” recipe series! Recipe starts at exactly: 0:42. I’m showing you how to make vegan “chicken” fajita salad with an easy vegan ranch salad dressing recipe that is seriously so delicious! I hope you love this video! Full recipe below ๐
Vegan Chicken Fajita Salad Recipe
3 cups chopped green leaf or romaine lettuce
1/4 red bell pepper
1/4 green bell pepper
1/4 red onion
chile powder
cumin
salt + pepper
frozen Gardein chicken strips
Vegan Ranch Dressing Recipe
1 tbsp vegan mayo
1 tbsp unsweetened soy milk
1/8 tsp white rice wine vinegar
1 tsp chopped Italian falt-leaf parsley
1 tsp chopped chives
1 tsp chopped dill
1/8 tsp garlic powder
1/8 tsp sea salt
1/8 tsp black pepper
(more salt and pepper to taste if desired)
Combine ingredients in container with a lid. Shake until well combined. Drizzle over salad and enjoy!
Note: This makes a thin dressing. For a thicker dressing use more mayo or less soy milk ๐
