What to do with that leftover Rotisserie Chicken? Well, in less than 10 minutes, you can make a delicious chicken salad with apples and celery. Or take it to the next level with dried cranberries!

I have been known to buy a chicken and eat it every day when my husband is out of town. Unlike most people, I usually cook every day, even just for myself. But sometimes, I want one of those chickens.

I usually eat one thigh or a leg, and maybe have another piece of chicken for a second meal, then I need to do something with the leftovers. My favorite quick and easy leftover recipe is this rotisserie chicken salad. I also like to make Tuscan Chicken Soup for a warm meal in the fall or winter.

I like the lemon pepper flavored chicken but if I know I will have leftovers to work with I get the traditional flavored chicken. Lemon pepper tends to give the salad or soup a weird flavor. 

Another thing I like about the rotisserie chickens is the price. You can’t buy many entrees to serve a family of 2-6 for less than $10. 

Rotisserie Chicken Salad

Ingredients

  • 4 ounces (about ½ cup) Rotisserie Chicken (skinned and deboned)
  • 1 medium apple
  • 2 stalks of celery
  • 2 tablespoons onion (chopped)
  • ⅓ cup Mayonnaise
  • ⅛ teaspoon pepper (or to taste)
  • 1 tablespoon lemon juice
  • dried sweetened cranberries (optional)
  • chopped pecans or walnuts (optional)

Instructions

  • Cut the chicken into 1-inch cubes.

  • Core, seed, and chop the apple into small pieces.

  • Dice the celery into small pieces.

  • In a medium bowl, mix the chicken, apple, celery, onion, mayonnaise, pepper, and lemon juice gently until well mixed.

  • Serve over a bed of lettuce.

Variations

Add dried cranberries, seedless grapes, or your favorite nuts to the recipe. 

Add chopped dill or sweet pickles.

Adjust the amount of mayo to your taste or substitute salad dressing instead.

Spice it up with garlic or Cajun seasoning.

I also like to spice my salad up with Mrs. Dash Original Seasoning. They removed the Mrs from the name in 2020, but old habits die hard.
