Ingredients:

  • 1 lb. jumbo peeled, deveined raw shrimp, patted dry
  • 2 3/4 tsp. Cajun seasoning (such as Emeril’s), divided
  • 1/2 tsp. kosher salt, divided
  • 2 (3 oz. each) andouille sausages, chopped into 1/4-inch cubes (about 1 cup)
  • 1 large shallot, thinly sliced (about 1/2 cup)
  • 3 Tbsp. sherry vinegar
  • 2 tsp. honey
  • 1 tsp. whole-grain mustard
  • 8 cups mixed salad greens
  • 4 cocktail tomatoes (such as Campari), quartered
  • 2 unpeeled Persian or mini cucumbers, sliced on an angle (about 1 cup)
  • 1/4 cup chopped mixed fresh tender herbs (such as parsley, chives, and basil), plus more for garnish
  • 2 Tbsp. fresh lemon juice (from 1 lemon)
