Chickpea Tuna Salad | Easy Vegan Lunch Recipe



This easy vegan chickpea tuna salad is a great dish to turn to for lunch throughout the week! You can double the recipe and store it in the fridge for several days. Serve this vegan tuna salad on a sandwich, on toast, on lettuce cups, or dive into it with a spoon.

Easy Vegan Chickpea Salad Recipe:
1 can of chickpeas, rinsed and drained
1/4 cup of vegan mayo
1/4 cup of diced tomatoes
2 celery stalks, diced
1/3 cup of dill pickle, diced
2 cloves of garlic, minced
2 tablespoons of red onion, diced
1 tablespoon of Dijon mustard
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1 pinch of cayenne pepper (optional)

Chickpea Salad Instructions:
1. Drain and rinse one can of chickpeas (or two if you’re doubling the recipe).
2. In a large bowl, roughly smash chickpeas using a potato masher or fork. Leave them a little chunky for optimal texture.
3. Add all remaining ingredients and mix until thoroughly combined.
