Crunchy Chinese Chicken Salad

Ingredients:

  • * 3 tablespoon soy sauce
  • * 3 tablespoon rice wine vinegar
  • * 1/3 cup vegetable oil (i don't recommend you use olive oil ..too
  • strong)
  • * 1/2 ” to 1″ piece ginger, grated
  • * 1 garlic clove, grated
  • * 2 tablespoon sugar
  • * 2 teaspoon sesame oil
  • for the salad:
  • * 4 cup chopped romaine lettuce
  • * 2 cup shredded red cabbage
  • * 2 carrot, shredded
  • * 3 green onion, chopped
  • * 1 can mandarin orange, drained
  • * 1 can sliced water chestnut, drained
  • * 1 tablespoon cilantro, chopped
  • * 1 cup chow mein noodle
  • * 1/2 a rotisserie chicken, or 2 cup cooked chicken, diced

Instructions:

  1. To prepare the dressing, whisk together the soy sauce, rice wine vinegar, vegetable oil, grated ginger, grated garlic, sugar and sesame oil.
  2. In a large bowl toss salad and dressing, leaving out the chow mein noodles. Just before serving add in chow mein noodles and toss. Enjoy!
