Crunchy Super Food Salad
2 cups finely shredded Kale
1 cup grated cauliflower
1 yellow bell pepper, finely cubed
1 mango, finely cubed
1 cup green olives, finely cubed
1/2 cup capers
1/2 cup flat leaf parsley, minced
Dressing:
3 tbsp Extra Virgin Olive Oil
1tbsp Apple Cider Vinegar
1 garlic clove crushed
1 shallot, minced
1/2 tsp dijon mustard
1 tsp raw honey
Sea salt and pepper to taste.
