Ingredients:

  • 1 x 460g pack chicken thigh fillets by Sainsbury’s, roughly chopped
  • 1½ tablespoons grated fresh ginger
  • 1 teaspoon mixed herbs by Sainsbury’s
  • ½ teaspoon paprika by Sainsbury’s
  • ½ teaspoon ground allspice by Sainsbury’s
  • ½ teaspoon ground cumin by Sainsbury’s
  • ½ teaspoon ground coriander by Sainsbury’s
  • 3 tablespoons olive oil by Sainsbury’s
  • 1 cucumber, washed, trimmed and cut into ribbons using a vegetable peeler
  • Juice and zest of 1 lemon
  • 1 red chilli, washed, deseeded and finely sliced
  • ½ red onion, finely sliced
  • 100 g bag baby leaf spinach by Sainsbury’s
  • ½ x 28g pack fresh mint by Sainsbury’s, washed and torn
  • Seeds of 1 pomegranate
