Here is my latest obsession – vegan chickpea “tuna” salad 🙂
It takes under 10 mins to make, so perfect for a quick snack, breakfast or lunch. You can eat it alone, on top of some lettuce cups, or even in a sandwich!
RECIPE:
– 1 can chickpeas/~250g cooked chickpeas
– juice of 1/2 lemon
– 3 pearl red onions/1 small shallot, chopped
– 2 tbs vegan mayo
– 1 tsp dijon mustard
– salt & pepper (season to taste)
