Let’s talk about eggs!

How do I love eggs? Let me count the ways! Eggs are an awesome keto food choice for so many reasons. They are a low carb food and incredibly nutrient rich food. Eggs are a great source of protein and provide us with choline, folate, iron, lutein, phosphorus, selenium, zinc, and vitamins A, B, D, E, and K. Another great thing about eggs is the vast number of ways you can cook and eat them. You can bake, baste, boil, fry, poach, and scramble eggs. Within these categories you can further choose the exact doneness of your eggs depending on how long you cook them. Eggs can be used in casseroles, frittatas, omelets, quiches, salads and stir fry dishes just to name a few. You can also top some of your favorite foods, such as burgers, meats, and vegetables with a fried or poached egg for a fun change up!

Let’s talk about the dressing for our keto horseradish egg salad!

We start with keto mayonnaise which makes this egg salad creamy and delicious. I like the Chosen Foods brand of avocado oil mayonnaise and that’s my go-to! For the horseradish you can use prepared horseradish, or you can make homemade horseradish sauce using fresh horseradish root. I love fresh horseradish, but I also like the convenience of the prepared. For the mustard, you can substitute yellow or even spicy brown in place of the Dijon if you’d prefer. A little pickle juice, keto sugar, smoked paprika, salt, and pepper are all that is needed to create an awesome flavor for our dressing. I always recommend you taste your salads and add more salt and pepper if you’d like.
