  • 150g mixed lettuce leaves

  • 3/4 cup fresh flat-leaf parsley leaves

  • 1/3 cup fresh dill sprigs

  • 1 red apple, cut into thin matchsticks

  • 2 tbsp lemon juice

  • 1 tbsp extra virgin olive oil

  • Select all ingredients

3 Method Steps

  • Place lettuce (150g mixed lettuce leaves), parsley (3/4 cup fresh flat-leaf parsley leaves), dill (1/3 cup fresh dill sprigs) and apple (1 red apple, cut into thin matchsticks) in a large serving bowl.

  • Whisk lemon juice (2 tbsp lemon juice) and oil (1 tbsp extra virgin olive oil) together in a jug. Season with salt and pepper.

  • Drizzle dressing over salad. Toss gently to combine. Serve.

For crisp and vibrant salad leaves, rinse under cold water, in a colander, and drain on a tea towel to absorb excess water.

Drizzle cut apple with lemon juice or cut just before serving to prevent it from going brown. For extra crunch, sprinkle salad with chopped pecans or walnuts just before serving.
