
Ingredients:
- 1. 4 small mangos, peeled and cubed
- 2. 3/4 small red onion, thinly sliced
- 3. 3/4 red pepper, thinly sliced
- 4. 2 tablespoons fish sauce
- 5. 5 tablespoons sugar
- 6. Large handful each cilantro & mint, minced
- 7. 1/4 cup of peanuts, ground
Instructions:
- Toss all the ingredients together in a bowl.
- Garnish with leftover whole peanuts or cashews.
