Russian red cabbage and beetroot salad with salt & vinegar dill dressing – Absolutely mouth watering, insanely delicious and looks really festive so you can grantee it would the star on your Christmas table!

Ingredients:

1 Beetroot, grated roughly
1/4 red cabbage, shredded
1.5 tbsp salt
1/2 cup cooked buckwheat
1/4 cup finely chopped dill
2 tbsp apple cider vinegar
1 tbsp tamari soy sauce
2 garlic cloves, minced
1/4 tsp black pepper
1 tsp dried coriander
1 tsp pure maple syrup

Directions: Salt the cabbage and beetroot to remove all the moisture out of them and leave them like this for about 30 min to an hour, then drain them and rinse them under cold water. combine all the ingredients really well and remove to a serving bowl.
