
Ingredients:
- * 1 cup small green bean (we used frozen)
- * 2 cup mixed greens
- * 4 beefsteak tomato,
- * 1 red bell pepper, chopped
- * 2 hard boiled egg,
- * 1 7 oz can tuna in olive oil, drained
- * 1/2 tablespoon parsley, chopped
- * 16 pitted olive, chopped
- * 6-8 anchovy fillet, halved lengthwise
- * 1/2 cup olive oil
- * 2 teaspoon wine vinegar
- * 2 garlic clove, minced
- * salt and pepper to taste
Instructions:
- Bring salted water to a boil in a small pot. Cook beans for 10 minutes, until tender. Drain, rinse, and cut in half crosswise.
- Arrange lettuce in a dish. Place beans top. Layer with tomatoes, bell pepper, olives, eggs, and tuna. Sprinkle salad with parsley. Arrange anchovies in between eggs.
- To make dressing, whisk together olive oil, vinegar, garlic, salt and pepper and pour over salad.
