
This healthy salad dressing takes just a few minutes to whip together and keeps for several days in the fridge. Try it with spicy greens, such as arugula, or any of your favorite dinner salads.

Ingredients

½ cup extra-virgin olive oil

¼ cup sherry vinegar

1 teaspoon minced garlic

1 teaspoon Dijon mustard

¾ teaspoon salt
Directions

Pour oil into a mason jar. Add vinegar, garlic, mustard and salt. Cover and shake to blend.
Tips
To make ahead: Refrigerate for up to 3 days. If the oil solidifies, let dressing stand at room temperature for about 30 minutes before using.
