Who else finds themselves craving more salads when the weather is warmer?  Having something light to eat seems to be what I want to all the time right now.

I’ve had a big bag of shrimp in my freezer for almost a month just waiting for me to do something with.    And since I eat chicken 95 % of my life it seems, it was screaming at me yesterday to sauté up for something a little fun and different.

The seasoning is just the perfect spicy for me.  Not too overwhelmingly hot.  Kick it up with a little more cayenne if you prefer hotter.

TO get started, I simply put the frozen shrimp in a bowl of cold water to thaw it for a few minutes.  Then heated a little coconut oil over medium heat, added the seasoned shrimp and cooked for 5 minutes.

While it was cooking, I shredded and washed my lettuce and cut the avocado.

You could really any of your other favorite veggies in too of course.  You could even add some black beans and/or corn to give it even more of a southwestern flair if you’d like.

The dressing is just a very simple olive oil and lemon mixture with a little chili powder.  It’s so light and fresh!

Ingredients to make Spicy Shrimp Salad, makes 4 salads

1 lb shrimp, peeled and deveined

1 teaspoon each cumin and chili powder

¼ teaspoon cayenne pepper

1 avocado, diced

½ cup cilantro, chopped

2 cups Romaine lettuce (or other lettuce of choice)

Dressing:

3 tablespoon olive oil

1 tablespoon lime juice

1 teaspoon chili powder

¼ teaspoon cayenne pepper

Pepper to taste

DIRECTIONS

In a bowl, mix together chili powder, cumin, cayenne, and pepper.

Add in shrimp and toss to coat.

Heat 1 tablespoon oil in a saute pan over medium heat and saute shrimp 4-5 minutes or until cooked.

Divide lettuce, cilantro and avocado onto 4 plates.

Add a few shrimp to each plate.

Whisk dressing ingredients together, the drizzle a little over each salad.
