STIR FRY SALAD Recipe – VEGAN Cooking for guests!

Feeding a guest? Even if they’re not vegan, anyone will love this Thai Stir Fry salad recipe with baked sweet potatoes. And the dessert will definitely get them falling in love too. The apple crisp and Glo bars are from Oh She Glows and can easily be made WSLF by omitting the oil, and substituting some of the sugar for applesauce or banana!

Salad Recipe:
1-2 Thumb sized pieces of ginger
1 toe garlic
4 Tbsp. vinegar
3 Tbsp. soy sauce or coconut aminos
2-3 Tbsp. Peanut butter *OPTIONAL if you want nuts in it
4 Tbsp. lime juice
2 tsp. Sriracha
2 Tbsp. water
2 Tbsp. almond milk
2 Tbsp. maple syrup or other sweetener *Substitute orange juice if you want it sugar free

1 bunch kale
1/2 head broccoli
1/2 head purple cabbage
2 carrots
1 cup edamame
1 cup mushrooms
3 green onions
1/2 bunch cilantro
1 bell pepper
1 cup snap peas

-Blend sauce ingredients until creamy and pour over chopped vegetables!
