Farro is a wheat grain. Although it does contain gluten, but very low level of gluten, which makes it for people sensitive to gluten tolerate it easier.
It absorbed flavors therefore can be used in different recipes.
It is super healthy and delicious! Has chewy texture and nutty taste.
3 cups farro(washed and cooked al dente)
3 cups fresh baby spinach
2 cups cherub tomatoes(cut in half)
2 roasted bell peppers
2 cups mushrooms(sauteed in butter)
1 zucchini (cubed)
½ red onion(sliced)
½ cup capers
1 bunch parsley(chopped)
½ cup fresh basil(chopped)
4 tbsp freshly squeezed lemon juice
3 cloves garlic(minced)
1 cup extra virgin olive oil
salt and pepper to taste
