This vegan Caesar salad dressing recipe from Thug Kitchen is ridiculously simple, vegan (I’m not a vegan but hey, it doesn’t hurt now and then), and beyond delicious. I’m super tough on Caesar salad dressing by the way, so I don’t put the word “best” out there lightly. It’s that good. I’ve slathered it on every piece of lettuce I’ve consumed in the last two weeks, no joke. I’m obsessed. Let me know if you give it a shot!

The RECIPE:
Almond Caesar Salad
✸ ½ cup slivered almonds
✸ 1/3 cup hot water
✸ 1 to 2 cloves garlic
✸ 2 tablespoons lemon juice
✸ 1 teaspoon Dijon mustard
✸ 1 teaspoon rice vinegar
✸ 1 tablespoon capers
✸ 1 head of your favorite lettuce (obvi I’m all about the kale right now)
✸ A handful of Homemade Croutons…
Homemade Croutons
✸ ½ loaf day-old bread (5 cups of cubes)
✸ 3 tablespoons olive oil
✸ 1 ½ tablespoons lemon juice
✸ 1 ½ teaspoons garlic powder
✸ 1 teaspoon dried thyme
✸ ¼ teaspoon paprika (I used smoked, but go for whatever)
– I go a little overboard on the spices, and also add in sea salt. It’s all to taste, so go with what you love here. These happen to store really well in Ziploc baggies. Sometimes I’ll actually just snack on them if I need something crunchy. Super simple. You’ll never buy them in-store again!
