I’ve been making this recipe since I was a teenager. It’s simple and delicious. I added the liquid aminos in over time, it gives a nice salty zippity doo dah to the recipe. You don’t have to add that, I just like it. If you have black salt, use that instead of liquid aminos!! It will be much better. It will give it a salty eggy flavor. I just don’t normally have that ingredient on hand.
Vegan egg salad recipe
-2 blocks of tofu (I like to use 1 firm and 1 extra firm, but you can use 2 firms or 2 extra firms)
-2 large scallions (or you can use white, yellow, or red onion)
-about 1/4 cups fresh dill (you can add more or less depending how much of a dill fan you are)
-1/2 cup vegan mayo of choice (more or less depending how you like your egg salad)
-3-4 tbsp of Dijon Mustard
-2 tbsp of Apple Cider Vinegar or lemon juice
-2 tsp of Liquid Aminos
-1 tsp Onion powder
-1 tsp Garlic powder
-1/2 tbsp – 1 tbsp Turmeric powder ( I like a lot, at least 1 tbsp, but I’m a turmeric head. If you are new to turmeric, start with 1/2 tbsp-1 tbsp)
-2 tsp 21 seasoning salute from Trader Joe’s. (If you don’t have this you can just use black pepper)
Paprika for topping (optional)
-Wrap tofu in a clean dish towel, place on a plate. Put some kind of weight on top.
-Let sit for 30-60 minutes.
-Put tofu in a large bowl. Mash with a potato masher, until you have the consistency of egg salad.
-Add all the condiments and spices. Mix well.
-Chop the scallions and dill. Add to tofu salad. Mix well.
*You can cut this recipe in half if you want a smaller batch. I just like making a lot of food at once, so I have leftovers.
*If you want your egg salad more yellow, add more turmeric. Add less if you want it lighter yellow.
Turmeric not only gives dishes great color, it’s super good for you. It’s a great anti-inflammatory!
*If you have black salt, use 1-2 tsp of that, instead of the liquid aminos. It will be even better.
