
I developed the recipe for this Tropical Superfoods Salad in Kauai and simply had to share it! It is both vegan and paleo. To complete the meal add protein.
Ingredients:
- 1 5 Oz Bag Organic Baby Greens
- 1 1/2 Cups Cucumbers (sliced)
- 1 Cup Sweet Maui Onions (thinly sliced)
- 1 Avocado (chopped)
- 2/3 Cup Macadamia Nuts (chopped)
- 1 Mango (chopped)
- 2 Tbsp Fresh Lemon Juice
- 3 Tbsp Olive Oil
- Black Lava Salt (to taste)
- Freshly Ground Pepper (to taste)
Instructions:
- Gather your fruits and veggies, and chop them into small pieces.
- Simply stir all of the ingredients together in a large bowl. If you make the salad ahead of time do not add the avocados until it is time to serve, or they'll turn brown. Enjoy!
