Tropical Superfoods Salad

I developed the recipe for this Tropical Superfoods Salad in Kauai and simply had to share it! It is both vegan and paleo. To complete the meal add protein.


  • 1 5 Oz Bag Organic Baby Greens
  • 1 1/2 Cups Cucumbers (sliced)
  • 1 Cup Sweet Maui Onions (thinly sliced)
  • 1 Avocado (chopped)
  • 2/3 Cup Macadamia Nuts (chopped)
  • 1 Mango (chopped)
  • 2 Tbsp Fresh Lemon Juice
  • 3 Tbsp Olive Oil
  • Black Lava Salt (to taste)
  • Freshly Ground Pepper (to taste)


  1. Gather your fruits and veggies, and chop them into small pieces.
  2. Simply stir all of the ingredients together in a large bowl. If you make the salad ahead of time do not add the avocados until it is time to serve, or they'll turn brown. Enjoy!
