Serves 10-12 as a side dish

For the potatoes:
3-4 quarts of fingerling potatoes
Avocado oil, canola or vegetable oil
Garlic powder
Salt and pepper

Preheat oven to 425 and line baking sheets with parchment paper. Cut potatoes and spread on baking sheet. Drizzle with oil and add seasonings. Toss with your hands, evenly spread on baking sheet and place in the oven for 15-20 minutes, flip and cook for another 8-10 minutes until crispy and golden brown.

For the sauce:
3/4 cup vegan mayo
1 TBS lemon zest
Juice of 1 1/2 lemons
1 tsp red wine vinegar
1/2 tsp white pepper
1 TBS dijon
Salt to taste
1/4 cup chives
1-2 TBS fresh mint
3-4 stalks of celery, diced
1 shallot, diced

Whisk everything together in a large bowl and pour over the cooled potatoes. Make a day a head to save time and enjoy!
