Warm Veggie Salad | Sanjeev Kapoor Khazana

A warm vegetable salad for cold days. walnuts , potato, walnuts , raisin and veggies then assemble with the lettuce and drizzle some balsamic vinegar to make a speedy meal for two.



1 medium carrot, cut into roundels
2 small red radishes cut into roundels
1 medium sweet potato, cut into ½ inch pieces
2 tablespoons raisins
2 tablespoons walnuts
2 teaspoons fresh mixed herbs
Salt to taste
Crushed black peppercorns to taste
1 tablespoon olive oil + for drizzling
Few iceberg lettuce leaves
1 teaspoon balsamic vinegar


1. Preheat oven to 180° C.
2. Combine carrot, raisins, walnuts, radish, sweet potato, fresh mixed herbs, salt, crushed peppercorns and 1 tablespoon olive oil in a bowl and mix well.
3. Spread the vegetable mixture on a baking tray. Put the tray into the preheated oven and bake for 15-20 minutes.
4. Place few torn iceberg lettuce leaves in a serving bowl. Put the roasted vegetable mixture on top.
5. Drizzle some olive oil and balsamic vinegar. Sprinkle some crushed peppercorns on top and serve warm.
