3 Must Try Dinner Recipes

Three healthy, vegan dinner recipes. Fast and easy. Chili Lime Taco recipe starts: 0:25. Warm Rosemary Salad recipe: 2:34. Greek Veggie Burgers: 4:42. Hope you love these recipes! Share with fellow foodies in your life 🙂

Chili Lime Tacos
Serves 2

1 can chickpeas, rinsed
juice of 1/2 of a lime
1 tbsp chili powder
1/2 tsp garlic powder
1/4-1/2 tsp cayenne pepper
salt and pepper to taste

Avocado Lime Dressing
1/2 of an avocado
juice from 2 small limes
3 tbsp water
1/2 tsp agave
1/2 tsp salt
1/2 tsp pepper

corn tortillas

shredded cabbage
finely chopped red onion
fresh cilantro

Warm Rosemary Salad
Serves 2
2 small potatoes
2 handfuls of cauliflower
1 large beet, peeled

Chop veggies into large chunks, sprinkle generously with salt and pepper, and 1 tbsp dried rosemary.

Toss to combine and roast for 20 minutes at 375 degrees.

Remove from oven and toss with 3 chopped dried apricots, 1 handful of golden raisins, and 1 handful of chopped almonds.

Oil-Free Balsamic Vinaigrette
3 tbsp garlic hummus
1 tbsp balsamic vinegar
1 tbsp water

Shake to combine.

Vegan Tzatziki Sauce

1 small container of almond milk yogurt
1/4 cup diced cucumber
1 tbsp chopped dill
1/2tbsp garlic powder
the juice of half of a lime
salt and pepper to taste

1 veggie burger, I used the Dr. Praagers
whole wheat pitas, warmed

red onion
cucumber slices
