1. Kale Lemon Salad
Ingredients:
2 Cups Kale (washed )
2 tbsp raisins
2 tbsp walnuts
1 whole lemon juice
1/4 tsp garlic powder
1 tbsp Nutritional yeast
1/2 Avocado chopped
Salt and pepper to taste
Method:
1. Wash, De-stem the kale leaves. Chop kale and transfer it into a mixing bowl.
2. Add walnuts, cranberries , avocado into the bowl. Top with salt, pepper, garlic powder, nutritional yeast.
3. Serve immediately.
2. Pesto Quinoa Salad
Ingredients:
1/4 cup uncooked white quinoa
1 cup Water
1 small onion chopped
1/2 cup cherry tomatoes halved
Dressing:
1 cup Basil leaves
1 clove garlic
1 tbsp nutritional yeast
1/2 Avocado chopped
Water 1/2 cup
Salt and pepper 1/4 tsp each
Method:
1. Wash and chop all the veggies.
2. Wash quinoa properly. Bring the water to a boil. Add the washed quinoa.
3. Cover the pan and cook the quinoa for 20 mins on low to medium heat until quinoa is tender, soft and water is absorbed.
4. Meanwhile combine the basil, ,garlic nutritional yeast, avocado, water, salt and pepper in the blender and blend until smooth.
5. Mix the pesto, cooked quinoa, and chopped veggies and serve immediately.
3. Rainbow Salad
Ingredients:
1/4 cup Chopped Purple cabbage
1/2 chopped Avocado
Handful baby Spinach
1/4 cup boiled yellow corn
5-6 chopped grape tomatoes
1/4 cup chopped and peeled carrots
1/4 cup onion rings
Dressing
1 tbsp Tahini
1/2 lemon juice
salt and pepper to taste
Method:
1. Wash and Chop all the vegetables.
2. Make the dressing and mix into the veggies.
3. Serve immediately.
4. Mediterranean Chickpea Salad
Ingredients:
1 cup cooked chickpeas
1/2 cup chopped cucumbers
1/4 cup chopped green pepper
1/2 chopped Avocado
1/4 cup chopped red onions
1/4 cup chopped cilantro leaves
1 whole squeezed lemon juice
Salt and pepper to taste
1 tsp olive oil
Method:
1. In a bowl add chickpeas and all the chopped veggies.
2. Mix in lemon juice, salt, pepper, olive oil and Serve immediately.
