Ingredients:
- 2 large cucumbers, roughly skinned and cut 1/8 inch thick
- 1 small white onion, chopped
- 1/4 cup apple cider vinegar
- 1 Tablespoon olive oil
- 2 teaspoons dill
Instructions:
- In a large bowl combine, cucumbers, onion, vinegar, olive oil and dill.
- Cover with a tight lid and shake till dressing coats entire salad.
- Serve cold. Best if let sit 2-3 hours before serving.
